- 3 lb beef chuck roast
- 1 large onion, sliced
- 6 cloves garlic, minced
- 4 whole garlic cloves
- 1½ cups beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp butter
- 1 tbsp olive oil
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
FOR THE GRAVY:
- 2 tbsp cornstarch
- 2 tbsp cold water
HOW TO MAKE:
- Pat the beef chuck roast dry with paper towels. Season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until a rich golden-brown crust develops.
- Arrange the sliced onions in the bottom of a 6-quart slow cooker.
- Place the seasoned beef roast directly over the onions.
- Sprinkle the minced garlic over the roast and arrange the whole garlic cloves around the meat.
- Place the fresh rosemary and thyme sprigs on top of the beef.
- Add the butter over the roast.
- Mix the beef broth with Worcestershire sauce and pour it around the sides of the slow cooker.
- Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the beef is extremely tender and pulls apart easily with a fork.
- Carefully remove the roast and transfer it to a serving platter. Let it rest for a few minutes.
- Remove the herb stems from the cooking liquid.
- Mix the cornstarch with cold water until smooth. Stir the mixture into the hot cooking juices.
- Cover and cook on HIGH for another 15–20 minutes, until the gravy thickens.
- Slice the beef against the grain or gently shred it into large, tender pieces.
- Return the beef to the slow cooker and spoon the rich garlic herb gravy over the top.
- Serve hot with the softened onions and whole garlic cloves.
