INGREDIENTS:
- 1½ lb lean ground beef
- 3 medium potatoes, peeled and cubed
- 3 carrots, sliced
- 1½ cups green beans, cut into pieces
- 1 cup corn, fresh, frozen, or canned
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 5 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
- 2 tbsp chopped fresh parsley, optional
HOW TO MAKE:
- Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.
- Add the ground beef and cook for 5–7 minutes, breaking it into small pieces until nicely browned.
- Drain any excess grease from the pot.
- Add the diced onion and minced garlic. Cook for another 2–3 minutes until fragrant.
- Stir in the tomato paste, Italian seasoning, garlic powder, smoked paprika, black pepper, and salt.
- Add the diced potatoes and sliced carrots.
- Pour in the diced tomatoes, tomato sauce, beef broth, and Worcestershire sauce.
- Stir everything together and bring the soup to a gentle boil.
- Reduce the heat to medium-low, cover, and simmer for 15 minutes.
- Add the green beans and continue cooking for another 10–15 minutes, until the potatoes and carrots are tender.
- Stir in the corn and simmer for another 5 minutes until everything is heated through.
- Taste the broth and adjust the seasoning if needed.
- If the soup becomes too thick, add a little extra warm beef broth until it reaches your preferred consistency.
- Sprinkle with fresh parsley and serve hot.
COOKING TIPS:
- Use lean ground beef for a rich, savory soup without excessive grease.
- Frozen or canned vegetables work perfectly, making this a great pantry-friendly dinner.
- If using canned green beans, add them during the final 5 minutes to prevent overcooking.
- For a thicker broth, gently mash a few potato pieces against the side of the pot.
- Add a splash of Worcestershire sauce for extra savory depth.
- Serve with warm crusty bread, garlic toast, or homemade dinner rolls.
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
