INGREDIENTS:

  • 1½ lb lean ground beef
  • 3 medium potatoes, peeled and cubed
  • 3 carrots, sliced
  • 1½ cups green beans, cut into pieces
  • 1 cup corn, fresh, frozen, or canned
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 5 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • 2 tbsp chopped fresh parsley, optional

HOW TO MAKE:

  1. Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.
  2. Add the ground beef and cook for 5–7 minutes, breaking it into small pieces until nicely browned.
  3. Drain any excess grease from the pot.
  4. Add the diced onion and minced garlic. Cook for another 2–3 minutes until fragrant.
  5. Stir in the tomato paste, Italian seasoning, garlic powder, smoked paprika, black pepper, and salt.
  6. Add the diced potatoes and sliced carrots.
  7. Pour in the diced tomatoes, tomato sauce, beef broth, and Worcestershire sauce.
  8. Stir everything together and bring the soup to a gentle boil.
  9. Reduce the heat to medium-low, cover, and simmer for 15 minutes.
  10. Add the green beans and continue cooking for another 10–15 minutes, until the potatoes and carrots are tender.
  11. Stir in the corn and simmer for another 5 minutes until everything is heated through.
  12. Taste the broth and adjust the seasoning if needed.
  13. If the soup becomes too thick, add a little extra warm beef broth until it reaches your preferred consistency.
  14. Sprinkle with fresh parsley and serve hot.
